Tropical Rum Balls with Coconut

Seasonal celebrations call for festive treats like our coconut chocolate truffles or rum balls with dark Caribbean rum and fresh coconut. These no-bake desserts add instant warmth to any holiday party. If you prefer them without rum or want your children to enjoy them as well, just replace rum with more cream of coconut.

Ingredients (yields about 30 balls):

• 1/2 cup steamed almonds*, chopped
• 2 cups lady fingers (or gluten-free alternatives), crushed
• 1/4 cup unsweetened cocoa powder
• 2 tablespoons pure honey
• 4 oz cream of coconut (or 8.5 oz and no honey)
• 3 tablespoons quality dark rum (optional)
• 1/2 cup fresh or dry coconut, shredded

* Add whole almonds into a cup and pour boiling water over until fully submerged. Allow to soak for about 10 minutes, drain and peel off the skin.

1. In a food processor, combine almonds, coconut and crushed lady fingers. Pulse to finely chop.

2. Add cocoa, honey, cream of coconut and rum and pulse until mixture comes together. Adjust consistency by adding more cocoa, if too dry, or more rum, if too wet.

3. Using a teaspoon, scoop out mixture and form a ball using your hands and place on parchment paper. Roll in coconut flakes, cocoa powder or crushed nuts, as desired.

4. Refrigerate for one hour and store in air-tight container until ready to serve.
