Veggie skewers (also called kebabs, souvlaki, shashlik or špíz in other cultures) are an easy and healthy side dish or even main meal. Whether you’re looking to balance–or find a veggie alternative for–grilled meats, making a garden picnic or simply want to enjoy fresh grilled veggies, these skewers offer a colorful palette of possibilities. You can use almost any vegetables such as zucchini, squash, eggplant, bell peppers, mushrooms, onions, cherry tomatoes or garlic. If you prefer more flavor, you can marinate your veggie skewers in your favorite marinating mix for about 30 minutes before baking or grilling. You can also add fruit chunks like pineapple or mango into the mix to for a slightly sweet twist.
You can use stainless steel skewer sticks that are made specifically for this purpose and can be endlessly reused, or wood or bamboo sticks. A useful tip before you start: Soak wood sticks in warm water for about 20 minutes before using; this will prevent them from burning over a flame or at high temperatures.
Ingredients (yields 4-6 servings):
4 mushrooms, halved
1 tablespoon lemon or lime juice
1 teaspoon fresh or dried oregano, chopped
2. Place aluminum sheet on the bottom of casserole and sprinkle or spray olive oil.
3. Thread veggie slices onto the skewers and alternate.
