European Chicken Garlic Vegetable Soup vs. Cold and Flu Season

When you or your little one wakes up with an achy body, sore throat or a congestion, first thing that comes to your mind is: What can I do to make him feel better?  A few time-trusted home remedies can help (but please get a doctor’s opinion first if you have any concerns).

Feel-better ideas for both kids and adults:

  • get a lot of rest
  • sweat it out and boost your immunity
  • drink lots of hot liquids like hot tea with honey and lemon and homemade chicken soup with garlic and veggies

healthy Chicken Garlic Vegetable Soup

Ingredients (about 6 servings)
1 large chicken breast with bones and skin or about 1 pound of chicken parts, raw
10 cups water
2 cups fresh or frozen vegetables (broccoli, cabbage, corn), chopped to small pcs
3 medium-size red potatoes, chopped to small pcs
3 large carrots, chopped to small pcs
1 white onion, chopped to small pcs
6 cloves of garlic, chopped
1/2 tablespoon salt
1 tablespoon oregano, fresh or dried, chopped
1 tablespoon cilantro or parsley, fresh, chopped
1/2 teaspoon ground pepper (optional)
Directions
1. Add all chicken pieces including bones and skin to large pot, add salt.
2. Boil for about 20 minutes on medium heat.
3. Cut vegetables and potatoes into small pieces, chop garlic.
4. Remove pot from stove, remove chicken from broth.
5. Cut meat into small pieces and put back into pot with vegetables.
6. Cook for another 20 minutes on medium heat until all pieces are soft.
7. Remove pot from stove, cool down for 10 minutes, serve in bowl with chopped cilantro or parsley garnish.

Storing idea:

Cool soup down and pour into a plastic container with a tight lid, store in your freezer. When ready to use, thaw soup in room temperature or on slow heat in a medium-size pot. Serve hot, garnished with chopped cilantro or parsley. You cal also add fresh chopped garlic based on your taste-optional.

Baby food idea:

Cool soup down and drain some broth according to your preferred consistence of baby food. Blend with hand blender and store in sterilized 4oz or 6oz glass jars. If you are planning to use the soup as baby food for a baby younger one year, refrain from using salt-see below references.
