We all wonder from time to time, How long, exactly, have those eggs been sitting in the fridge? We can’t really open each one and check for freshness, but there’s a simple–and ancient–test that will do the job without cracking them open: Simply place egg(s) in a bowl of cold water; if the egg stays submerged under the water, it’s still good. If it starts floating towards–or on–the surface, it’s time to throw it away; bad eggs float because they produce gases that make them buoyant.
