Sunday Pound Cake with Cacao

The origin of the name pound cake comes from the fact that it used to be made from a pound of flour, butter, eggs, and sugar. However, it has evolved over the years and even the 1:1:1:1 ratio has been modified based on new dietary and nutritional needs. Our version of pound cake uses much less sugar and butter, and by adding cacao powder (unsweetened cocoa powder) the cake gains a richer flavor, perfect for a Sunday afternoon coffee break or snack. The batter can be poured into a variety of forms to fit your personal needs or to keep the portions practical for your children and prevent overeating.

Ingredients:

  • 12 oz (or 2.75 cups) whole wheat or pastry flour
  • 3½ oz (or 1 cup) brown sugar
  • 3½ oz unsalted butter, softened
  • 4 medium-size eggs
  • 1½ tablespoons non-alum baking powder
  • 1 tablespoon quality cacao powder
  • ½ cup raisins
  • 2½ tablespoons vanilla sugar or 2-3 teaspoons vanilla extract
  • 1 cup warm milk or soy milk
  • ½ teaspoon lemon peel, finely shredded

Directions:

  1. Preheat oven to 350 degrees F.
  2. Separate egg yolks from egg whites in small bowls.
  3. In medium-size bowl, beat butter together with egg yolks and sugar at medium speed with an electric mixer until creamy and fluffy.
  4. In a separate bowl, whip egg whites with vanilla sugar until light and fluffy.
  5. In a separate bowl, combine flour, baking powder, cacao powder, lemon peel and salt and mix together.
  6. In to the butter mix, alternate adding milk, whipped egg whites and flour mix. Stir all ingredients gently together until batter is smooth without any lumps.
  7. Place baking paper in your form of choice and pour batter into the form. Bake at 350 degrees F until a toothpick inserted into center comes out clean, approx. 30 to 45 minutes depending on height of your form. Cool in pans 15 minutes; run a knife around edge.
  8. Serve warm or cold with a side of fresh fruit.
